Cilantro Salsa with Guacamole
This dip may not be 100% green, it has some green in it with the avocadoes and goes great with some green tortilla or kale chips and only takes about 10 minutes to prepare. Here’s what you need:

Healthy Green Cupcakes with Shamrock Icing
Truly one of the easiest cupcake or muffin recipes for St. Patrick's Day because you can purchase a healthy mix or do it yourself using a traditional recipe passed down from your grandmother. Simply mix the muffin or cupcake mix and add green tea powder or food colouring to make the mix green.
For the icing, combine some freshly whipped cream and cream cheese with either a splash of green tea powder or food colouring. Pipe a shamrock on top of the muffin or cupcake once cooled and serve up to your guests.
Toasted Kale Chips

Now, simply heat your oven to 350 degrees and place the rack in the middle of the oven. Be sure to wash your kale and let it dry on paper towels or place in a spinner. Cut the kale into bite size pieces (these will become your chips). Spray with oil and season up the leaves, place evenly on a baking sheet and place in the oven. Bake for about 15 minutes or until the leaves are as crispy as you like. You may need to turn the leaves a couple of times during the baking process to ensure crispiness. Kale chips burn easily, so be sure to watch for brown edges and check often.
